Marvelous Mouth-watering Marmalade Muffins
Say that 10 times! Beth got a little ambitious the other morning and baked up some Marmalade Muffins for her family. They were happy she got ambitious in the morning and I was happy she shared her recipe with us. So here you go! Enjoy the Muffins! By the way, Beth, your pictures are getting much better. Thank you for "not" using the flash. The natural light in your pictures really helped.
PERFECT PRUNE MARMALADE MUFFINS (don't fret because there are prunes in this recipe. Prunes are good - especially in Beth's Marvelous Marmalade Muffins!)
The Players:
2 cups flour
1/2 tsp. salt
2 tsp. baking powder
1/4 cup sugar
1 tsp. lemon peel
2 eggs
1 cup milk
1/4 cup melted butter
1 cup of snipped prunes dusted with a bit of flour to separate.
2 Tbs. orange marmalade
1/4 cup light brown sugar
1/4 cup flour
1 Tbs. orange juice
Stir together the flour, salt, baking powder, sugar and lemon peel in a large bowl.
In another bowl, lightly beat the two eggs.
Stir in the milk...

In yet another bowl, stir together the marmalde, brown sugar, flour, and orange juice until smooth.
Have your oven already preheated to 425 degrees. Coat muffin pans with cooking spray.
When the oven is preheated, finish putting together the muffin batter. Muffin batter doesn’t like to sit around, so have everything ready to go. Stir the egg/milk mixture into the flour mixture and stir well, but don’t overmix, about 40 strokes or so.
Fold in the prunes.
Spoon about 1/8 cup of the batter into each muffin cup.
Top with a spoonful of the marmalde mixture, and cover with remaining batter.
Sprinkle with sugar. Bake for approximately 20 minutes.
With a pastry brush, brush the tops of the hot muffins with extra marmalade and ...
poke several holes in the tops of the muffins to let it seep in. Remove to a rack and let cool or serve warm.
Don't these look delicious?!!! These muffins with a nice hot cup of coffee, some orange juice, and sitting outside in the early morning sun. What a perfect start to the day. Makes 12.
